We would love to pair it with something crispy or fatty, like otoro sushi or fried calamari. The grapes are from 32 year old vines on limestone soils above the river Le Serein. Done a little more 'old school', this wine is aged in a combination of neutral oak and stainless steel, and sees lees aging for 5 to 8 months. A wine that has a rounder
