Christian Venier 'Le Clos de Carteries' Cheverny Rouge, 2022 limoncello red shiso leavesThis wine is made from 70% Gamay and 30% Pinot Noir, from 20 40 year old vines hand selected from the Clos des Carteries vineyard. We would pair it with miso marinated salmon with steamed bok choy topped with a ginger sesame sauce. The whole cluster grapes undergo a semi carbonic maceration, much like in classic Beaujolais, and are fermented with natural yeasts. The fermentation begins in cement and is then moved to stainless steel to age on its lees.
